Christmas Baking has become quite a tradition in #DitsyDecember! From pretty gingerbread biscuits to cute mini Christmas puddings to some classic Brookies this time last year - I just seem to love getting my baking hat on during the festive season! All of the previous recipes came from an 'influencer' in some way, shape or form but this time round, I thought I'd just have a good ol' browse of BBC Good Food and came across this pretty yummy-sounding recipe! A classic cookie, but with a festive, fruity twist...
Mincemeat Cookies (Makes 12):
15 minutes prep time, plus 10 minutes cooking time
Ingredients:
125g softened butter
100g dark brown soft sugar
50g golden caster sugar
1/2 heaped teaspoon fine sea salt
1 medium egg
1 teaspoon vanilla extract
5 tablespoons mincemeat
220g plain flour
1/2 teaspoon bicarbonate of soda
Pre-heat your oven to 180C/160C fan/gas mark 4. Beat the butter with both types of sugar and the salt, before beating in the egg, vanilla extract and mincemeat. Stir in the flour and bicarbonate of soda and then chill in the fridge for 20 minutes. Then, scoop tablespoons of the mixture onto two lined baking trays. Make sure you leave space between each one to allow them to spread too! Bake in the oven for 10-12 minutes - or until the cookies are just firm around the edges but soft in the middle. Remember, this is always the best way to go when baking cookies as they will firm up completely as they cool but still be slightly gooey in the middle! Transfer to a wire cooling rack, leave until completely cool and then you're ready to give them a try...
Once again, I'm pretty proud of myself and how these beauties came out! I'd highly suggest you giving them a go if you fancying doing some last minute Christmas baking over the next few days. Fairly quick and easy to make, super festive and really yummy too - what more could you want, eh?
